1 ciabatta roll
2 tablespoons olive oil
2 large organic cage-free eggs
1 slice provolone cheese
2 tablespoons plain greek yogurt
1 cup spinach
Himalayan pink salt & pepper to taste
Louisiana hot sauce to taste
- Preheat oven to 400°. Halve ciabatta roll and drizzle 1/2 olive oil over open side. Toast in oven 5 minutes.
- Meanwhile, heat the rest of olive oil in a small skillet over medium heat. Add eggs. Break yolks with spatula. Sprinkle with salt and pepper.
- When eggs are almost done top with provolone cheese. Turn off stove and let cheese melt.
- Spread yogurt on ciabatta roll. Add eggs and spinach. Top with hot sauce.
To make this even more yummoh, try adding arugula in place of spinach.
