Lots of people have been saying that the lemon cakes came out too doughy and after checking the video I SEE THAT I HAVE MADE A MISTAKE FOR THE OIL MEASUREMENTS IN THE VIDEO!
PLEASE FOLLOW THE DESCRIPTION BOX RECIPE FOR THE CORRECT MEASUREMENTS! Sorry for the confusion! x

Chocolate and lemon vegan cupcakes!

Chocolate cupcakes:
100g/3.5oz plain flour
100g/3.5 caster sugar
2 tbsp cocoa powder
3 tbsp veg oil
125ml water
1 tsp vegan vanilla extract
0.5 tsp bicarb soda (CORRECTED)
0.5 tsp Apple cider vinegar

Chocolate Icing:
300g vegan icing sugar
100g dairy free margarine
3 tbsp cocoa powder
1 tsp vanilla

lemon cupcakes:
100g plain flour
100g caster sugar
50g veg oil (CORRECT – IGNORE VIDEO MEASUREMENTS)
125ml water
Juice of 1 lemon
Zest of 1 lemon
0.5 tsp baking powder
1 tsp vanilla

lemon icing:
300g icing sugar
50g dairy free margarine
lemon juice (to loosen)
1 tsp vanilla

  1. Does anyone have a good Vegan vanilla cake/cupcake recipe I’ve tried 2 but although tasty were very curumbly and didn’t really hold up.  Can you just omit the lemon from this for milk or water?

  2. I tried this recipe and I tried to use gluten free flour and it failed miserably very good (though I cooked them for maybe an entire hour to try and cook them) It was probably the gluten free flour but maybe you could do this recipe gluten free as well so I could know where I went wrong?

  3. the chocolate cupcake it is not so nice, to empty taste I think it would be great if yogurt/ milk added in the recipe & the sugar is not enough if we don’t put the topping.and the lemon cake the zest of 1 lemon is too much.
