wild rice dressing (vegan & gluten-free) Something Vegan Thanksgiving sides week

1 Tbsp. olive oil
1 small onion, finely chopped
4 celery ribs, finely chopped
3 cups cooked wild rice
1 cup slivered almonds
1 cup dried cranberries
1 Tbsp. fresh parsley, chopped
1 Tbsp. fresh sage, chopped
1 tsp. salt
1/4 tsp. ground black pepper

Heat olive oil in a pan over medium-high heat. Add onion, and celery. Stir and let cook about five minutes. Add cooked rice, almonds, cranberries, parsley, sage, salt, and black pepper. Stir and cook until heated- about three minutes. Serve hot. Makes 4-6 side servings.
