On the 8th Day of Vegmas My Vegan love made for me, 8 Truffles Truffling, 7 Slices of gingerbread french toast, 6 Fruity Tartlets, 5 Peppermint Cupcakes! 4 pies of wheat, 3 lentil loafs, 2 Snowman Pops & a House made of Gingerbread and candy!

✦ White Bean Truffles ✦
1 Cup white beans (rinsed & drained)
1 TBSP of nut butter (try any kind or defatted. Nonfat, use a date!!)
2 TBSP of flavor powder like coco, vanilla, pb2
1 TBSP of granulated sweetener like maple, coconut, brown sugar
1. Combine all ingredients in food processor and process until everything is smooth and clumping together. Stop to scrape the sides as necessary.
3. Taste mixture and adjust sweetness, add tiny bit of maple syrup is batter is too dry. The truffle batter should be very very thick.
4. Pick out 8-10 piece and roll into truffle balls.
5. Decor your balls with yummy toppings. Refrigerate!
