Vegan Vanilla Pudding Recipe (9.12.12 – Day 31) Avocado Banana Pudding

Vanilla pudding is one of my favorite snacks, but it is not vegan. I think I have found a way to take the dairy out of the vanilla pudding and add nutrients at the same time. Have you ever had avocado pudding before? Me neither. Lets give it a try.

Vegan Vanilla Pudding Recipe – Avocado Banana Pudding


1 ripe avocado
1/2 frozen banana
1 tablespoons vanilla extract
3/4 cup almond milk
1/4 cup powdered sugar or other sweetener (optional)


In a food processor, blend together the meat of the avocado and the banana until few chunks remain.

Turn off the blades and scrape down the sides. Add in vanilla extract and continue to blend. You may have to stop the blender, but if you have a spout for pouring liquids in, slowly add in the almond milk.

Continue to blend until completely smooth. If you need it to be sweeter, feel free to add in the sweetener of your choice.

  1. This was actually pretty good. I didn’t use almond milk and it was a pudding consistency. Thank you for the recipe. Also, I blended mine with chopped walnuts …yummy! I bet it tastes great topped with coconut flakes or cacao nibs.

  3. This seems interesting with the avocado. Usually when I do a vanilla pudding, I use ripe bananas (with the brown spots on the peels), some coconut milk, and then vanilla extract. It can be easily mixed in a sizable bowl, then eaten in the same bowl, though personally I usually just make a meal out of it, instead of a small dessert portion.

  4. To make Vanilla Pudding I only boil 500 ml soymilk, mix together 34 g cornstarch with 6 tbsp. soymilk and 3 tbsp. raw cane sugar and add the pulp of a vanilla bean, put that stuff in the boiling soymilk and stir it up.

  5. Looks great! I’m Filipino and I grew up with my Mom always mixing avocado and milk and sugar but she never blended it to make a puree…this looks great with the additional banana + vanilla!
