Vegan Sugar Cookies – Simple Christmas Holiday Recipe | Vlogmas 11

RECIPE:

Dry ingredients:
2 and 1/4 cups of all purpose flour
1/2 teaspoon baking powder
1/4 teaspoon of salt

Wet Ingredients:
1 vegan egg (tablespoon of ground flax and 3 teaspoons of water)
3/4 cups of vegan butter
3/4 cups of vegan friendly sugar
2 teaspoons of vanilla extract
1/2 teaspoon of almond extract

For Frosting/Icing:
2 cups of organic powdered sugar
8 tablespoons of coconut milk

Mix all dry ingredients in a large mixing bowl, the flour, baking powder, and salt until mixed well together.

Then beat the butter and the sugar in a separate bowl until it becomes a liquid like mixture, after that, add all the rest of the wet ingredients and beat all together until well mixed, the vegan egg, sugar, vanilla, and almond extract.

Then add the wet mixture into the dry mixture and mix well together until it becomes dough like, add water if it seems too dry, start with only 1 tablespoon of water if needed.

Once your dough is done, grab two sheets of parchment paper and put dough in between and roll the dough out with your rolling pin until the dough is 1/4 inch thick, set aside… you can put it into the freezer for 10-15 minutes to help it stick together easier and help you cut the shapes.

Now we will be making the frosting/icing while the dough is freezing or the cookies are cooking:
Add the coconut milk into the powdered sugar and mix well until it becomes like frosting/icing, add more powdered sugar if the mix is to runny and more milk if it is too thick. You may also add food coloring to add a nice holiday touch. Make sure it is vegan friendly. Set aside until your cookies are done cooking.

Now after freezing, use cookie cutters to cut shapes out of the dough (We used part of a mason jar too make our own kind of cookie cutter since we did not have cookie cutters! 🙂

Put the cookies on parchment paper on a baking tray and cook it into the oven for 8-10 minutes after the oven has preheated and 350 degrees. You will know when they are for sure cooked when the bottom of the cookies are slightly golden brown.

Now decorate your cookies with your frosting/icing and any other decorations!!! Enjoy! They are soooo goood!!!!!
