Vegan Omelette Rice!


300 gr of tomato sauce
a bit of salt and black pepper
2 table spoons maple syrup
1 and a half table spoon vinegar
1 table spoon soy sauce

Just mix everything

with 1 table spoon of olive oil, brown on a low fire 100 gr of chopped carrots and 100 gr of chopped onions
Add 450 gr of cooked brown rice, add a little bit of salt and pepper, and then add your ketchup
Cook everything for 5 minutes

175 gr of tofu
300 ml soy milk
a little bit of salt and black pepper
1 tea spoon turmeric powder

mix everything and then boil on a low fire. Stir it until you get the eggish consistency.

Once you’re done, serve the rice with your vegan egg. You could add some herbs on top if you wish, or add some more tomato sauce sweetened with coconut sugar or beet sugar.


  1. Suggestions could use chickpea flour to make omelet & edamame in the rice for colour. “The Asian Vegan Kitchen” has quite a few recipes that could help take advantage of local ingredients.
