Long time no meal prep video! It seems like it’s been forever. I haven’t been super good at meal prepping for some time, which might be why… but here’s a super easy, quick meal prep for you guys. Just a bunch of future lunches/dinners that you could make in bulk and refrigerate or freeze for later.

This low-fat peanut stirfry is super delicious with some rice, and I had this for lunch and dinner multiple times (i made so much that I had to freeze like half of it for later).

It’s basically the same recipe as my peanut stirfry video that I did a few weeks ago, except that I’m using PB2, which is powdered peanut butter. Powdered peanut butter is basically a low fat version of peanut butter which has had the oil extracted from it. It has 85% less fat than regular peanut butter. I’m not saying that regular peanut butter is the devil or that fat is evil, but sometimes it’s nice to have a lower fat alternative. Feel free to use regular peanut butter if that’s what you prefer.
