VEGAN FETTUCCINE ALFREDO RECIPE | EASY & DELICIOUS!


This super quick and easy ALFREDO PASTA RECIPE is oil free, nut free, dairy free, low fat, and can be made gluten free!

INGREDIENTS:
500g fettuccine noodles (use GF version to make recipe GF)
350g extra firm tofu (drained, not pressed)
1 cup plant based milk
juice of 1 lemon
1 tbsp nutritional yeast
1.5 tsp dehydrated parsley
1 tsp salt 1/2 tsp pepper
very small pinch of nutmeg
1 tsp garlic powder
3 large garlic cloves
1 small yellow onion (diced)
4 cups packed spinach
227g (1 package) sliced cremini mushrooms
1.5 tbsp fresh chopped basil

METHOD:
– In a food processor, combine tofu, lemon juice, nutritional yeast, parsley, salt/pepper, nutmeg, and garlic powder. Blend until smooth.
– Cook pasta according to directions on package.
– In a large non stick pan, sauté garlic and onion on medium/high heat, until onions just become translucent. Then add the sliced mushrooms and cook until they start to release water. Then add spinach, and fresh basil. Cook until spinach has become wilted.
– Add the “cheese” mixture to the vegetables and combine. Keep warm on low heat and cover for 10 minutes to let flavours marinate. Then mix in your pasta.
– Serve with extra black pepper and fresh basil!

  3. Made this recipe tonight. Loved everything about it but the tofu. I’ve experimented with tofu in the past and figured I’d give it another try but I’m just not a fan. I need to figure out what to replace it with and I’ll be golden cause otherwise it was delicious. Definitely reminded me of traditional fettuccine alfredo. Didn’t hate it but not sure if I’d make it again. Can’t wait to try more of your recipes though. Love you and this video.

  5. I was so looking forward to this recipe but for me it was not good at all. The flavor was good but the texture was not good at all. I am just 2 weeks into being vegan and so looking for great meals, this one was not for me and my husband not a vegan gave it a chance as well and no way.

  7. Oh man!!!! Finally made this last night. What an awesome recipe!!! I used the coconut milk in the sauce. The BEST vegan Alfredo I’ve had!! Much better than the cashew ones! Thanks!! Love you guys!
