Today’s video is a food video on some vegan christmas sugar cookies! These are seriously AMAZING… I’ve made them for people and they had no idea that they were vegan! Plus, I added some cute minimalist decorations (who knew you could have minimalist cookies???) and they are so cute!
RECIPE, Makes Roughly 7-10 cookies, depending on size (originally from Pinterest but I can’t find the recipe)
➳ Combine Dry Ingredients:
1 cup Unbleached All-Purpose Flour
1/2 tbsp corn starch
1/4 tbsp salt
1/4 tsp baking powder
➳ Cream Together Wet Ingredients:
1/4 cup Earth Balance Vegan Butter
1/4 cup aquafaba (the juice from a can of chickpeas… this will act as an egg replacer)
1/2 tsp Pure Vanilla Extract
1/3 cup organic powdered sugar
1/3 cup organic white sugar
➳ Mix together wet and dry to form a soft dough.
➳ Grease a cookie sheet or line with parchment paper & roll dough into roughly golf-ball sized balls. Press down the dough to form a flat cookie. I’ve found that vegan cookies don’t flatten very well on their own.
➳ Bake at 350 degrees for 8-10 minutes.
➳ For Vanilla Icing, whisk together:
2 tbsp Earth Balance Vegan butter
1 tsp Vanilla Extract
1 tsp Unsweetened Vanilla Almond Milk (or plant-based milk of your choice)
2 cups powdered sugar, more or less depending on how thick you want your frosting to be
➳ (optional) Separate out 3 tbsp of icing, add 1/3 cup powdered sugar to thicken, and dye green for christmas tree. Top with sprinkles or edible stars!
