Trini Coconut Sweet Bread


Ingredients:

2 cups flour
2 tsp baking powder
1 cup granulated sugar
dash of salt
1 dried coconut – grated finely
1 cup butter or 2 sticks (227g)
1/4 coconut milk
1 1/2 tsp vanilla extract
1 tsp cinnamon
1 tsp nutmeg
1/2 cup of mixed fruits
1/2 cup dried cranberries or raisins
1 egg

Bake at 325 F for and hour or until a skewer or knife comes out clean when you stick it.

  3. I made it for Easter and it came out great, except for the slicing it tasted delicious 😋 I option the sugar at the top though too much sweet but thanks.

  4. I tried it…had to leave it in the oven a little longer than an hour but it came out perfect, even with the fresh coconut milk. Keeping cooking & posting…I’m learning!!

  5. You said 1tsp of Vanilla but the recipe you post says 1and a half tsp…which is it? Also I didn’t notice where you added the vanilla in your video so I added it with the egg and milk. Btw, I used freshly squeezed coconut milk…hope this works just as well.
