Traditional GREEK SALAD

1 large cucumber, seeded & cubed
4 large roma tomatoes, cubed
1 medium red onion, sliced thinly, soaked in ice water for 10 minutes, and drained (this makes the onion sweet)
1/4-1/2 cup Fresh Italian Parsley, roughly chopped
1 cup (4 oz) Feta Cheese
1/4 cup Kalamata Olives, leave whole or half
1/4 cup olive oil
1 Fresh Lemon Juice
1 teaspoon oregano
1/2 teaspoon fresh cracked black pepper

1. Add prepared tomatoes, cucumbers, red onions, Italian parsley, kalamata olives, feta cheese into a large bowl. Drizzle olive oil, fresh lemon juice, oregano, and pepper over fresh vegetables and toss. Serve immediately & ENJOY!! -Deronda 🙂

  1. Looks like a very delicious recipe. I wish I could make myself eat olives. They look delicious and the taste is fine, but they make me sick for some reason.
