100g Soft Light Brown Sugar
125g Caster Sugar
125G Salted Butter
225g Self Raising Flour
60g White Chocolate Chips
60g Dried Cranberries
1/2 Teaspoon of Table Salt
1/2 Teaspoon of Cinnamon
1/2 Teaspoon of Nutmeg
1 Teaspoon of Vanilla Extract
Measure out the brown sugar, caster sugar and butter and mix them together in a large mixing bowl until smooth
Add the flour (no need to sift) and egg into the bowl and mix together until entirely combine
Add the hazelnuts, chocolate chips, cranberries, salt, cinnamon, nutmeg and vanilla extract and mix until evenly distributed into the dough
Roll the cookie dough into small balls (roughly to size of a ping pong ball) and place on a greased sheet of baking parchment
Place in a pre-heated oven at 180 degrees celsius (350 fahrenheit) for about 20 minutes. Remove from the oven and place on a wire rack to cool.
