Spaghetti aglio e olio is a traditional Italian pasta dish. It is the simplest and most basic of all pasta. So watch and learn how to make Spaghetti aglio E olio at home with chef Ruchi Bharani only on Rajshri Food.

Ingredients
3-4 tbsp of extra virgin olive oil
6 cloves of garlic
2 tbsp of pine nuts
8 sliced button mushrooms
retained pasta water
1 tsp of chilli flakes
150 gms of boiled spaghetti
salt to taste
2 tbsp of parsley
crushed black pepper
few shavings of Parmesan cheese

Method
– Heat olive oil in a pan for 10 seconds
– Add sliced garlic and mix it properly and let it cook on low flame.
– Add pine nuts before the garlic turns brown
– Add sliced mushrooms and let them cook for 2 minutes
– Add pasta water, chilli flakes and give it stir
– Add the boiled spaghetti and salt to taste and toss the spaghetti in the garlic oil.
– Turn off the flame and add finely chopped parsley, crushed black pepper and toss it well
– Spaghetti Aglio E Olio is ready to be served.
– Grate some Parmesan cheese over the Spaghetti Aglio E Olio.

  1. spaghetti aglio e olio requires spaghetti+ oil+ garlic which this recipe clearly has. All you butthurt italians, go away. Don’t watch an indian channel which tweaks it’s recipe to suit the italian palate 🙂

  5. Please do something about the background music …it was not all in sync with the Recipie and was very disturbing… At one point I felt the need to MUTE the video

  6. pasta is mushy ..not al dente ..i hate mushy pasta …and i think mushrooms could have been thinner so while sauteing it its nutty flavor could have been more enhanced.. good try though ..

  7. @Sara : you are totally right, but you have to call it “Ruchi Spaghetti”. This recipe have no relation with “Aglio e olio” traditional recipe. Please stop filling your mouth with “similar Italian names”. If you dont know really italian kitchen, please leave. You can be wonderful chef in your country, but if you cook this recipe to an italian calling it aglio e olio, you will receive the dish on you face, guarantee.

  8. I’m italian and i think you never taste a spaghetti aglio e olio in your entire life… you only need 3 ingredients: oil garlic and fresh hot peppers. If you put more than this its not more aglio e olio pasta and the one you show its NOT our traditional recipe.
