Slow Cooker Overnight Breakfast Casserole

Today, I show you my overnight slow cooker breakfast casserole. Perfect to make on Christmas Eve, or any time you have family staying over.

Slow Cooker Breakfast Casserole

26 oz hash browns thawed
16 oz breakfast sausage
12 eggs
1 cup milk
2 cups cheese
1 green bell pepper
green onion (for garnish)
cooking spray

Start by spraying your slow cooker with nonstick oil. Or you can use slow cooker liners, which completely eliminate any cleanup mess. Place the thawed hash brown potatoes at the bottom of the slow cooker. Cook and drain your breakfast sausage and layer it on top of the potatoes. Place the chopped green pepper and cheese on top next. Finally, whisk together all dozen eggs with one cup of milk and salt and pepper to taste. Pour the egg mixture over everything. Place the lid on your slow cooker, and cook on low for 8 hours. When your casserole is finished cooking, your slow cooker will automatically switch to “warm” mode and keep it warm for a number of hours. I like to serve mine with extra shredded cheese, chopped green onions and hot sauce!

Slow cooker liners
I often use these and they make cleanup so easy!

All Clad slow cooker
I use an All Clad slow cooker that is no longer available. This seems to be the updated version.

Hamilton Beach slow cooker
This one is more affordable and is Amazon’s pick!

  1. Oh my goodness…adding these to my recipes…I’m almost done catching up on your videos. and reading your book in between, now I can read your book with no distractions of wanting to finish watching your videos. I have a thing of finishing what I start. And I am thoroughly enjoying the videos and book…I checked out at library. Learning, gleaning and am encouraged greatly by you. Tfs, blessings! 👌🏼❤😘

  2. Thank you for sharing this recipe, Jennifer! I have mind in the crock pot and my house smells scrumptious! I cannot wait to share this with my family in the morning! Merry Christmas and Happy New Year! Your videos have brought much inspiration to my 2016 and looking forward to your return in 2017! God bless!

  3. This video could not have come at a better time. I host an ugly pajama Christmas breakfast every year and was stumped on what I could make besides eggs. This is perfect. I will try it and send you a picture. Thank you so much Jen. Can’t wait to try it.

  4. That looks really delicious! I tried your broccoli-cheddar soup not too long ago, and absolutely loved it, so I look forward to testing this recipe as well. Thanks for sharing!
