Hey guys! Today, I will be showing you how to make this classic, yet fancy, vegan quiche tart recipe! This quiche is sooo delicious especially when served with corn on the cob, salads, or crunchy bread on the side! I loved how the crust was crunchy, yet flakey. And it paired very nicely with the creamy filling that really resembled actual eggs . . . which was kind of surprising. Best served the day of! Recipe Below!
Simple Vegan Quiche Tart Recipe
Makes two 9 inch quiche tarts

Crust: Makes enough for two tart pans
2 1/2 cups all-purpose flour
12 tablespoons Earth Balance Vegan butter
1 teaspoons salt
1/2 cup cold water

Quiche filling: Makes enough for two quiche tarts
3 tablespoons olive oil
2 1/2 cups chickpea flour
3 cups water
2 teaspoons fine sea salt
½ teaspoon freshly ground black pepper
1/2 cup red bell pepper, chopped
1/2 yellow onion, chopped
1/2 cup mushrooms, sliced
3 cloves garlic, minced
