Quick Vegetables & Coconut Milk Soup Recipe is here (Serving- 2 Person)-

For this recipe we need…

1) Coconut Milk- 2 Cup
2) Tomato Puree- 3 Tbsp
3) Rolled Oats- 1 Tbsp
4) Vegetables (Carrot, French Beans, Capsicum & Corn)- ½ Cup
5) Mint Leaves (Chopped) – 1 Tbsp
6) Coriander Leaves (Chopped)- 1 Tbsp
7) Garlic (Finely chopped) – 1 Tbsp
8) Black Pepper Powder- 1 Tbsp
9) Salt to taste…
10) Cooking Oil- ½ Tsp

(Process)

1) Heat oil in a pan, add chopped garlic and sauté for a minute…

2) Add vegetables, mix well and cook for 3 to 4 minutes…

3) Add tomato puree and mint leaves, mix well and sauté for a minute…

4) Add oats and coconut milk, salt and pepper, mix well and cook for 2/3 minutes.

5) Serve hot garnished with coriander leaves.
