To the vegans and non-vegans you will enjoy these. It’s not too sweet. It’s just right. Chocolate lovers will enjoy. It’s delicious and looks festive.
COOKIES TREATS AND YUMMY FOOD. BUNDLE UP AND MAKE THESE FOR THE SEASON.
-1/2 cup coconut oil, room temperature
-1&1/4 cups sugar
-1/2 cup unsweetened applesauce, room temperature
-1/4 cup unsweetened almond milk, room temperature
-2 teaspoons pure vanilla extract
-2 cups all-purpose flour
-2/3 cup unsweetened cocoa powder, sifted if clumpy
-1 teaspoon baking soda
-1/2 teaspoon salt
-2 (3 ounces) peppermint chocolate bars, chopped up
-4 crushed up candy canes
Preheat oven to 350 degrees F. Lightly grease two baking sheets (I used parchment paper).
In large bowl, cream together oil and sugar. Add applesauce and milk; mix gently. Mix in vanilla.
Add 1 cup of flour, along with cocoa powder, baking soda and salt. Mix well. Mix in peppermint chocolate chunks and then add remaining 1 cup of flour and mix until it firms up. Might need to use hands.
Place twelve 1 1/2 scoops of dough on each baking sheet, a few inches apart. Flatten slightly with hand. Place a pinch of crushed candy cane in the center of each ad press gently into the surface.
Bake for 10 minutes. Remove from the oven and let cool for 5 minutes, then transfer to a cooling rack.
Makes 36 cookies.
Tip: if you cannot find peppermint chocolate, chips or dark chocolate bars will work fine.
