Peas! Greek Vegan pea stew (arakas)


INGREDIENTS

1/2 cup olive oil
1 onion
1/2 kg (1 lb) frozen peas
1 cup chopped tomatoes or tomato sauce
Dill
3-4 potatoes
3-4 carrots
Salt and pepper

INSTRUCTIONS

Sauté the chopped onion in a bit of olive oil or water
Add the peas
Add the tomatoes and 1 cup of water, salt and pepper
Clean, peel and chop the rest of the ingredients and throw them in the pan
Stir well and once boiling, lower the heat to low-medium and cook for 30 minutes (until potatoes are soft but not melting)
Add the olive oil (optional but recommended)

  1. I used to love this, the only difference was that it was mostly made with green beans. For meat lovers, cuts of roast lamb were added 10 minuts, or so before serving. Thank you for sharing this, my mouth’s watering already.

  2. Don’t the potatoes take longer to cook then the peas? I’ll be adding my peas in last as I don’t like them mushy and I’ll try it without any oil. Thanks

  3. I love it! When I make that dish, I use like a teaspoon of oil, sauté garlic onion oregano then add the rest of the ingredients, cook and serve with rice. I can never use that much oil though 🙁
