peanut brittle (vegan & gluten-free) Something Vegan Christmas Treats Week

2 Tbsp. vegan margarine
1 cup organic sugar
1/2 tsp. salt
1 1/4 cup peanuts (I used roasted, salted)

To a saucepan over medium heat, add vegan margarine. Stir and melt. Add sugar, and salt. Stir often, and cook until the sugar liquefies and becomes golden. (If you have a candy thermometer, you want it to come to 300 degrees. I didn’t use one though, and it was fine— just don’t let it burn.) Quickly remove from the heat and stir in peanuts. Immediately pour onto a baking mat or greased parchment paper, and spread out with a greased spatula. Let the brittle set. Break into pieces.
