  1. This is a LOT better if you leave the garlic to marinade in the oil for 10 minutes first, and then sautee slowly on low heat not high. This allows the garlic to infuse with the oil (a touch of salt helps to draw out the garlic flavour too). 

    I then add the spinach to the garlic and oil and allow to cook down and the water to disapate, then mix with the pasta and add parmesan and chilli flakes. 

    I cook this usually at least a couple of times a week and it’s one of my all time favourite dishes.
