Pumpkin and Pigeon Rice and Peas

2 tbsp avocado or grape seed oil
1 small onion, onion
6-8 chopped garlic pods
1 scotch bonnet pepper
2 sprigs fresh or dried thyme
2 pcs scallion
1 tbsp vegetable boullion
2-3 cups water
1 can coconut milk
2 1/2 cups rice
2 cups calabaza pumpkin
Salt to taste

Vegan Mac and Cheese

1 1/2 16 oz box pasta
2 cups vegan cheese sauce (instructions on how to make this below)
1/2 cup organic pink bread crumbs
1 small onion, diced
1/4 cup vegan butter
1 tsp paprika

Vegan Cheese Sauce (makes 4 cups)

2 cups potatoes, cut into small cubes
2 cups water
1/4 cub shallots or onions (large chunks)
1 cup carrots, (large chunks)
2 tbsp dijon mustard
1/2 cup soaked cashews
1/3 cup vegan butter
1/4 cup fresh lemon juice
1/4 tsp cayenne pepper
1/4 tsp paprika
1/4 tsp cracked black pepper
6 tbsp nutritional yeast
2 pods garlic 1 tsp Worcestershire sauce

Vegetable Samosa’s

5 medium potatoes chopped and boiled
1 large onion
4-5 garlic cloves
1 large carrot
1/2 lb peas
1 green hot pepper (optional)
1 2-inch piece of fresh ginger, grated
1 tsp cumin
1 tsp garam masala
1 tsp ground coriander
1/2 tsp cumin seeds
1/2 tsp turmeric
1/2 bunch fresh cilantro, chopped
3 tbsp avocado or grape seed oil

Red Curry Chick Peas

1 onion
4-5 garlic pods, chopped
1 2-inch piece ginger, grated
2 carrots, chopped
3 tbsp red curry paste
1/2 14 oz can organic baby corn
1/2 14 oz can organic bamboo shoots
1/2 15.5 ox can organic coconut milk
2 tbsp organic tomato paste
2 cups cooked or canned chick peas
2 tbsp lemon juice
1 tbsp coconut palm or brown sugar
2 tbsp organic tamari or soy sauce
1 bell pepper, chopped
Chopped cilantro for topping

Vegan Cranberry Sauce

3/4 cup coconut palm or brown sugar
1/2 cup orange juice
1/2 cup water
12 oz fresh cranberries, rinsed and picked through
2 cinnamon sticks
Grated ginger
1 piece orange peel
Pinch of salt (optional)

Ginger Bok Choy topped with Sesame Seeds

6-8 pods of garlic, chopped
1 2-inch piece fresh ginger, grated
2 large bunches of bok choy

Vegan Jamaican Sweet Potato Pudding

2 batata sweet potatoes, grated or blended in the food processor (add coconut milk to help process)
1 can coconut milk
3/4 cup coconut palm or brown sugar
1 1-inch piece grated ginger
1/2 tsp pure vanilla
1 cup spelt flour
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp salt

  1. You did a great job! I’m going to save this video on playlist for later… I have to try some of the recipes. For the vegan mac and cheese… would it destroy the recipe if I left out the cashews? My son has a tree nut allergy. That’s the only ingredient in the recipe he can’t have…. can it still work without them?

  6. Im always a fan of mac m cheese and somosa. Using puff pastry is good idea. There are so many cultures in the thanksgiving meal. Hmmmm love bok coy & the sweet potato pudding looks great that i wanna try. Happy Thanksgiving
