MUSHROOM AND SPINACH VEGAN QUESADILLAS – COOKING WITH MONAMI FROST AND GABRIELA


Mushroom and spinach Quesadillas –
ingredients –

1/2 large onion
3 garlic cloves
300 grams mushrooms
50 grams spinach
Chilli oil or powder / flakes (optional)
Olive oil
2 tsp oregano
2 tsp cumin
2 tsp paprika (can use smoked paprika (it might overpower all the other spices and the taste tho))
Mushroom stock cube or any veggie stock
Pepper
60-100 grams tomato paste /puree
100-200 grams any vegan melty / grated cheese (I used VEGUSTO Melty no moo cheese)
5 flour tortillas

I make jacket fruit tacos ( shred jack fruit spices are cumin garlic powder onion powder cumin and i put tomato consume then i microwave corn tortillas for a few minutes so i can fold them easily… Stuff with mixture and fry… When done top with shredded cabbage and i use siracha which I’m sure i misspelled lol.. It’s delicious)
