MUFFINS – healthy low fat vegan recipe

2 tbsp ground flax or chia + 6 tbsp water (might be able to omit, let me know!)
2-1/3 cup flour (I used half wholewheat/white spelt. may be able to use GF but this will change texture)
3/4 cup unrefined sugar or xylitol
1-1/3 cup dairy-free milk (I used soya)
1 tbsp baking powder (not soda)
1 tsp vanilla
1 finely grated apple

these are best eaten soon after baking (tbh they’ll probably only last that long). store in an airtight container.
