This is my go to pasta salad. If we are invited to go anywhere this is the salad I brink. The kids love it! No oil!!! No need to make it greasy. This dressing is also the salad dressing I use for my regular salads. Dr. Esselstyn adds 1 T of hummus to his so you could do the same and make it more creamy. Ahhhh the possibilities. I doubled the recipe that way I can have it the next day for lunch or dinner. Bellow I will have it halved . You can always double like I did.

1 bag of Pasta any pasta you like. Penne is usually the one I see people use. I like the bow ties best.
1/2 C dried cranberries (very important)
1 green onions chopped
1/2 bell pepper chopped (preferably red or yellow or orange)
1 cups red cherry tomatoes cut in half
1 1/2 C of cucumber chopped
1 C chopped curly leaf kale (you can use spinach or arugula too)
1/2 chopped cilantro
1/2 C balsamic vinegar (I use the Costco one)
1/2 C agave or maple syrup
1 T Dijon mustard
Optional Dr. Esselstyn adds 1 T of hummus to his dressing you could do the same. make sure it is an oil free hummus.
