Low Fat Vegan No Oil Pasta Salad EASY & Delicious

This is my go to pasta salad. If we are invited to go anywhere this is the salad I brink. The kids love it! No oil!!! No need to make it greasy. This dressing is also the salad dressing I use for my regular salads. Dr. Esselstyn adds 1 T of hummus to his so you could do the same and make it more creamy. Ahhhh the possibilities. I doubled the recipe that way I can have it the next day for lunch or dinner. Bellow I will have it halved . You can always double like I did.

Ingredients:
(any veggies you like)
1 bag of Pasta any pasta you like. Penne is usually the one I see people use. I like the bow ties best.
1/2 C dried cranberries (very important)
1 green onions chopped
1/2 bell pepper chopped (preferably red or yellow or orange)
1 cups red cherry tomatoes cut in half
1 1/2 C of cucumber chopped
1 C chopped curly leaf kale (you can use spinach or arugula too)
1/2 chopped cilantro

Dressing:
1/2 C balsamic vinegar (I use the Costco one)
1/2 C agave or maple syrup
1 T Dijon mustard
Optional Dr. Esselstyn adds 1 T of hummus to his dressing you could do the same. make sure it is an oil free hummus.

  1. I’m coming upon my one year plant based anniversary. I wanted to take a second and say thank you. Before I stumbled across your channel about a year a go I could never fathom cooking oil free. Watching you cook and later trying your recipes and having you share recipes books you use was so helpful. I’m eating pad Thai I made with your recipe right now and we love many recipes from your channel. The kids are obsessed with your baby pancakes. Going from junk food vegan to plant based and oil free has made a huge impact in my life and on my health! I’ve lost about 30 lbs and no longer suffer from headaches, migraines, insomnia, IBS, joint pain and much more. You helped make a huge change easier and inspire me still. Thank you!
