#ChefDeCoded brings to you this amazing Lemon Pie on the evening of Christmas by “Chef Rajesh” from “Hotel Holiday Inn, Mumbai”

For Dough Crust:
100gm Butter
100gm Icing Sugar
200gm Refined Flour
2 Eggs

For Pie Filling:
50gm Lemon Juice
2 Eggs
200gm Fresh Cream
200gm Milkmaid

For Dough Crust:
1) Preheat oven to 180°C.
2) Mix Butter, Icing Sugar, Refined Flour with your hands and bring it to the breadcrumbs consistency.
3) Put 2 whole Eggs and mix it well to form a dough and let it rest in the chiller for 10 to 15 minutes.
4) Sheet the dough & line it with tart using a cutter then press it firmly into an 8″ or 9″ pie plate & rest the dough tart for 10 to 15 minutes.
5)Prick dough tart with a fork (docking) and blind bake it at 180°C for 20 minutes.

For Pie Filling:
1) Mix Milkmaid, Fresh Cream, Lemon Juice and Eggs together.
“Chef’s Tip:- To enhance the flavor of the pie sprinkle some lemon zest into the filling”
2) Bring the dough tart to the room temperature and pour the pie filling into it.
3) Then again put it in the oven for 20 minutes at 140°C.
4) After 20 minutes take out your delicious Lemon Pie from oven and let it cool down until it reaches the room temperature.
5) Chill and store in a refrigerator, Pie should be served chilled.
Cut the Pie into 6 or 8 pieces, garnish with Chocolate Sauce & Top with Whipped Cream and Mint Leaf with Caramelized Lemon slice. Enjoy 🙂
