This is a hearty and almost rustic chicken dish that is made with whole chicken cooked with vegetables, tomatoes, spices, and wine. The bald Chef prefers to use breast sections of the Chicken for his recipe. In the South of Italy Red Wine is often used to cook this recipe, but up North White wine is often used. I prefer the Northern version of Chicken Cacciatore.


  1. My first job was at an Italian restaurant and we had cacciatore on the menu. The difference is we used our signature marinara sauce and marsala wine. Everything else is pretty much the same. I’m going to have to try it this way.

  2. I just found out that my grandfather is Italian.Family is from Sicily and Palermo..I have been looking for recipes to get intertwined with my Italian roots. My father is Spanish Italian. Lol I have the Spanish part down pact but I’m clueless on the Italian side. This looks very good!! Especially when you poured the juice on the noodles. Do you have any more recipes..preferably Italian??

  3. Looks good sir, I am a vegeratian who owns a restaurant in San Francisco and doing this catering gig with the cacciatore. Doing a trial tonight. Like your approach but i am gonna put some preserve myer lemon for brightness.
