The last months I´ve seen a lot of donuts recipes around social media, as vegan and donuts lover it is quite difficult or even imposible to find in my city a vegan donut.
Last week I felt inspired and under a power of a craving I just decide to make vegan baked donuts, I went for a baked version as usually I prefer to bake instead of frying as it is healthier and not so greasy.
The finish vegan baked donuts are really delicious and really cool! they are like a sponge, sweet, soft with a touch of vanilla. I love how the toppings mix with the donut, I particularly like the vegan baked donuts with the blueberry jam and chocolate, as the jam is more liquid and fresh it gives them a really nice touch.
I have to say as well that my second favorite ones are the vegan baked donuts with the hazelnut butter, it is just a dream, honestly you should try them, everyone would enjoy them. I believe this recipe is great too to make with kids as it is super fun to dip each donut and get a different combination of flavors!
The best part of this delicious vegan baked donuts is that they are made with healthy ingredients that are good for you, you are having chia seeds in your donuts! Now one will guess that.
total time: 45 minutes serving size: 12 serve
ingredients for the vegan baked donuts
1 & 1/2 cups spelt flour
1 cup coconut sugar
2 tbsp baking powder
1/2 tsp sea salt
1/2 tsp vanilla powder
1 cup almond milk
2/3 cup coconut oil
1 tbsp apple cider vinegar
2 chia eggs ( made with 2 tbsp chia seeds with 6 tbsp water, leave them overnight )
ingredients for the toppings
· blueberry sauce
3/4 cup blueberries
1/2 cup coconut water, if you don´t have it you could use just water
1 tbsp agave syrup
· hazelnut butter
3/4 cup hazelnuts
a pinch of sea salt
· melted chocolate
50g dark chocolate 70% cocoa
· 2 tbsp cacao nibs
· 2 tbsp grated coconut
Start by preheating the oven at 200ºC.
To prepare the dough of the vegan baked donuts, you´ll need 2 large bowls:
· in the first bowl, mix all the dry ingredients: spelt flour, coconut sugar, baking powder, sea salt and vanilla powder.
· in the second bowl, mix all the wet ingredients: almond milk, coconut oil, apple cider vinegar and chia eggs.
Pour the wet mix into the bowl with the dry ingredients and mix all together until you get a smooth consistency, you could just blend all the ingredients with a blender, it is up to you.
Grease a donut tray with melted coconut oil, then pour the dough in a pastry bag and fill the donut tray with the dough. Bake the donuts for 20 minutes at 200 °C, the donuts should be golden and the dough should be firm. Once the donuts are done, leave them to cool for 15 minutes or so, they will be firmer.
Whilst the donuts are baking we are going to make the toppings:
· for the blueberry sauce
in a medium size pan, combine the blueberries, coconut water and agave for 20 minutes at medium heat, you should get a smooth sauce.
· for the hazelnut butter
in a blender, just blend the toasted hazelnuts with the salt, it will take about 10 minutes to get the butter, just be patient.
· for the melted chocolate
melt the chocolate in a double boiler at medium heat until completely melted and smooth.
Once the vegan baked donuts are cool is when the fun stuff starts! I didn´t follow any particular order, just dip the donuts in chocolate or hazelnut butter and topping them with some cacao nibs, grated coconut, blueberry jam or whatever you like!
