  1. Don’t cook the pasta to al dente. Cook it to a bit before that. The pasta will continue to cook when introduced into the sauce. That means al denta pasta will be mushy pasta once it’s plated.

  2. For anyone wondering what brand of vodka to use, Grey Goose.
    jk, lol. Literally buy the cheapest brand you can find– so Smirnoff or Svedka. The vodka isn’t actually going to add any flavor to this dish, it’s just a catalyst to help release the full flavor of the tomato sauce and the other ingredients.

  3. It’s important to note for our viewers who don’t wish to consume alcohol, that alcohol DOES NOT “cook off” when heated. Some will evaporate but depending on how you cook and how long you cook the dish there will be more or less alcohol still remaining. It’s a common myth that all alcohol is “cooked off” when heated in a dish.

  5. he all recipes! im muslim so i cant eat pancetta. are there any good chicken or beef alternatives for this recipes. ohh so the alcohol isnt in the sauce when who cooked it enough?btw it looks delicous al the other ecipes are way to complicated this is so easy and delicous!
