How to Make Cookie Icing Three Ways with Three Looks

Decorating Supplies:

Baked cookies (see my Best Sugar Cookie Recipe)

Royal Icing Meringue Recipe (gives a matte look)

1 Cup powdered sugar
1 Tablespoons Meringue powder
1 1/2 Tablespoons water
1/2 teaspoon clear extract (almond, vanilla, etc.)

Beat in mixer until stiff peaks. Keep in air-tight container until use.

Royal Icing Egg White Recipe (gives a semi-gloss look)

1 Cup powdered sugar
1 Pasteurized egg white (no yolk) –
1 teaspoon cream of tartar
1/2 teaspoon clear extract (almond, vanilla, etc.)

Mix well. Keep in air-tight container until use.

Glossy Icing Recipe: (makes high gloss look)

1 Cup powdered sugar
2 teaspoons milk
2 teaspoons corn syrup
1/4 teaspoon clear extract

Mix well. Store in airtight container.


  1. Ah HA! Now I see my problem. Not enough mereigne powder. I used a recipe that called for 2 TBS in 2 POUNDS of powdered sugar. You do not even KNOW how long my cookies take to dry. My transfers? Fuhgetaboutit. 4 days and still cracking. Bah! Bastids. I’m fixing me pre made dry this instant.

  3. I usually just use powdered sugar and milk, then vanilla or almond extract. Simple. I will say, however, that seeing these methods side by side helps to show their similarities and differences. Thanks!

  4. Great video showing the three options for the Royal Icing. I have a question. When making the icing with the corn syrup does the milk have to be whole or can you use skim or low fat?

  5. Hello, i have been using the corn syrup recipe and it is amazing ! I love it, but is there any way i could use that you have a recipe that will hold it’s shape like with a flower tip?
