Vegan Fruit Cake/Christmas Cake

INGREDIENTS

18 Dates ( pitted and chopped )
3/4 cup almond milk
1 cup spelt flour (or plain flour)
1/2 cup sunflower oil(or any flavourless oil)
1 teaspoon baking powder
1 cups mixed dried fruits
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

METHOD

Soak the dates overnight in n the almond milk
Preheat oven to 180c / 350f / Gas Mark 4
Grease and line a medium sized loaf tin
Blend the date and milk mixture until fine and smooth
Add oil and dried fruits and stir
In a separate bowl sieve the flour and then add the baking powder, cinnamon, nutmeg,
Gradually add the flour mixture to the date mixture and stir slowly
Pour mixture into baking tin
Bake for 40-45 minutes or until a skewer places in the middle comes out clean
Remove from baking tin and place on a wire rack to cool
