Ever wonder what to do with or how to cook Italian sausage? Look no further than this recipe. This dish is fast and easy to make, and it also yields 3 different meal combos with 1 pan. This recipe is perfect for time-strapped parents – in fact, that’s who I designed it for! My friend, Eva Amurri Martino, has a 2-year old daughter and another one on the way. She’s also runs her own website, is an entrepreneur, and a writer. She asked me to help her think of a home cooked meal that has “mileage” – AKA a recipe that can be made once and yields multiple different food options. This easy sausage recipe is my answer to her challenge. The sausage and broccoli can be used as the base for a hearty fried egg breakfast, or a delicious sausage sandwich for lunch, or a hearty spaghetti for dinner (or all of the above!) I hope you enjoy!
Easy Sausage Recipe With Roasted Garlic And Broccoli Rabe – 3 Meal Combos in 1 Pan!
2 Tablespoons of extra virgin olive oil, divided
4 spicy Italian sausages
1 bunch of broccoli rabe, washed and ends trimmed
2 cloves of garlic, thinly sliced
1 lemon, halved
Salt & Pepper
Preheat oven to 375F.
Place the sausages on a 15 x 10-inch sheet pan and drizzle with 1 Tablespoon of olive oil. Bake in the oven for 10 minutes – set a timer!
When the timer goes off, flip the sausage over and move them to one side of the pan. Place the rapini and garlic on the other side of the same tray, drizzle with 1 Tablespoon of olive oil and a pinch of salt. Bake for 10 more minutes, flipping the broccoli rabe over at the 5 minute mark so that it does not char.
Remove from the oven and transfer to plates, before serving squeeze a little fresh lemon juice over each serving. Enjoy!
