Sweet Potato Lentil Curry
1 garlic clove
1/2 c onions
3/4c dry red lentils
2 c sweet potato
1 c peppers
1 c diced canned tomatos
2 tbsp tomato paste
1 c coconut milk
2 c veg broth
dash of cayenne
1/2 tsp ginger power or fresh
1 tsp cumin
1 tsp tumeric
1/2 tbsp curry power

Rice Bean Burrito Filling
1 garlic close
1/2 c onons
3/4c brown rice
1.5 canned tomato
1 c black beasn
3.5 tbspt omato paste
1/2 c corn
1/4 c salsa
nutritional yeast – 3 tbsp
1.5 tsp each of cumin, paprika, oregeno
tortillas and cilantro

Veg Noodle Soup
1/2 c onions
2.5 c frozen veg
2 stlaks celery
1 garlic close
3 c broth
1.5 c noodles
1 med potato

add salt and pepper to taste

  1. i loved it how you literally toss everything in there. very good recipes! is it ok to replace the pasta in the last meal with brown rice?

  2. the Sweet Potato Lentil Curry is amazing! did it on the stew setting of my multi cooker for 60 minutes but think I will try it around 45 minutes next time.

  3. #NewSub I made your rice cooker Curry and I used cauliflower with the red lentils and served it over diced baked sweet potatoes that I baked on Saturday night and had a couple left in the fridge. This is going to be a regular for me! So filling and a lot of us vegans have trouble feeling full, not with this! I also doubled the recipe so I could bank some meals in the freezer. Thank you so much for sharing! 🙂
