●●Ridge Gourd Peel / Skin Chutney●●
●●Brinjal (Egg Plant) Chutney ●●
Oats – 1/2 cup
Rava /Semolina/ Sooji – 1/4 cup
Yogurt / Curd – 1/2 cup
Onion – 1
Water – 1/2 cup
Oil – 1 tbsp
Mustard seed – 1/4 tsp
Urud dal / White lentil – 1 tbsp
Curry leaves – 1 tbsp
Cashews – 1 tbsp
Corn – 1/4 cup (optional)
Lemon – 1/2 tsp
Bicarbonate soda – 1/2 tsp
Batter Preparation :
💥Heat a pan and dry roast Oats for few mins .
💥Move it to a bowl before it turns brown and leave it to cool.
💥Take a pan and heat oil add mustard seeds . Once the mustard seeds begin to crackle add Urad dal,curry leaves and finely chopped onions and saute it.
💥Then add some Asafoetida and finely chopped onions to it and saute it.
💥Add Rava / Sooji to that and roast it for few mins .
💥Transfer the mixture to another bowl and let it cool.
💥Meanwhile coarsely grind the Oats and then add it to the roasted Rava which we transfered to a bowl.
💥Add required amount of salt ,Yogurt and water to it and mix it well. Bring it to idly consistency batter.
💥Add fresh Corns (optional) to it .You can also add any of the vegetables like green peas,carrots,etc.. whatever you have handy ..
💥Finally add lemon juice and soda to the batter and mix it well.
Steaming Process :
💥Add water to Idly pot and let it boil.
💥Grease the idly mold and pour the batter in a mold and keep it for steaming in a Idly pot with its lid on.
💥Steam the idly for 15 mins on high flame .
💥Take out the idly stand and let it cool for 5 mins. So that you take out the soft idlies without breaking.
💥Scoop out the idlies from the mold and serve hot idlis with any of the chutney of your choice.
💥Use the batter within one hour for preparation.
💥You can use any vegetables to the batter and make it even more healthier.
