Pumpkin Protein Pancake Recipe

1 cup rolled oats
¾ egg whites (or 3 whole eggs)
½ cup cottage cheese
¼ cup pumpkin puree
1 tbsp. maple syrup
1 tsp. pumpkin pie spice

Pop everything into the blender and blend until you have a pancake-like batter.

Heat a nonstick skillet over a medium heat. Lightly coat the pan with coconut oil or cooking spray and drop ¼ cup rounds of batter onto the pan. Cook until edges are bubbling and then flip and cook another two minutes or until edges are golden brown and pancakes are cooked though.

Makes 2 servings.

  1. Great looking recipe. Concerning freezing, I think you could put a piece of wax paper in between each one much like you would hamburgers. I love love love your channel as I am trying to eat as clean as possible.

You’re a great teacher mam and I think that you should do cooking workshops at schools to teach teachers, stay at home as well as working moms and kids how to make healthy meals, you will totally be helping so many more people because you are so engaging and charismatic and your classes will be so much fun for kids and parents and they will actually learn to cook healthy meals and open them to clean and delicious cooking and eating. Your episode with your daughter is awesome. I have learned to enjoy more meals s and drinks since I had to eliminate lactose and gluten from my diet due to health issues so thank you for your great videos! God bless you and your family!
