Gingerbread Men Cookies:
1 egg
1/2 cup coconut sugar
1/4 cup natural peanut butter
3 Tbsp molasses
1/4 cup unsalted butter
1 tsp ginger
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
1/2 tsp baking powder
1 1/5 cups spelt flour

Icing:
1 Tbsp melted butter
2 Tbsp unsweetened almond milk
2 cups icing sugar

  1. What can I substitute for coconut sugar?  I will try to find this at my bulk food store but don’t have access to a health food store as I live near a small town which doesn’t have a lot of shopping options.

  2. These look really cute! Good job 🙂 for the icing I would just use icing sugar and milk, no butter, that’s enough. For usual sugar cookies I like to use icing sugar and lemon juice, it tastes really good, and it reminds me of my grandmother 🙂 happy Friday!
