This is a great recipe for new vegans, or anyone who loves quiche!! Easy Vegan Quiche Ingredients:

1 frozen pie crust
½ sweet onion, chopped
8 ounces chopped mushrooms
1½ cups broccoli, chopped
2 cups spinach
1 package extra firm tofu, double pressed
½ cup original almond milk or soy milk
1/8 cup lemon juice
½ cup Daiya Mozzarella Shreds
¼ cup nutritional yeast
Salt and black pepper
1 tsp turmeric
½ tsp garlic powder
½ tsp cayenne pepper
1 tsp oregano
1tsp basil
Smoked Paprika


Preheat oven to 375°F.
Cook onions and garlic with a pinch of salt and pepper for 10 minutes, stirring often.
Add broccoli and mushrooms and cook 5 minutes longer. Set aside.

Mix tofu, milk and lemon juice with fork until well blended.
Add seasonings and nutritional yeast and stir well.
Combine tofu mixture, Daiya, sautéed vegetables and spinach and mix well.

Taste and adjust seasonings before spooning into pie shell.
Sprinkle with some Daiya cheese, Nutritional Yeast and Paprkia.
Bake for 50-60 minutes, until golden brown!
