//STUFFED BUTTERNUT SQUASH W/ JEWELLED QUINOA (serves 2)//

1 butternut squash

.Jewelled quinoa.

1 ½ cups cooked quinoa
2 cups torn or shredded kale
2 tbsp. olive oil
2 tbsp. lemon (juice)
pinch salt
black pepper
2 cloves garlic
¼ cup dried cranberries
1 small red onion

.Garlic dressing.

1 avocado
1 tsp. dried oregano
1 lime (juice)
1 heaped tbsp.. light tahini
¼ tsp. cayenne
1-2 cloves garlic
pink salt (to taste)
1/3 cup water (add more if needed)

//STIR FRIED MUSHROOM WILD RICE (4 servings)//

1 ½ cups wild rice (soak for 1 hour before cooking)
3 cups water
6 brown mushrooms
1 white onion
3 garlic cloves
2 inch piece ginger (peeled)
1 tbsp. dried oregano
black pepper & sea salt (to taste)
2 tbsp. tamari
1 tbsp. coconut oil

//BLACK BEAN NOODLES W/ COCONUT SAUCE AND VEG (serves 2)//

1-2 tbsp. coconut oil
7-8 garlic cloves
2 inch ginger (grated)
1 white onion
1 tbsp. basil
1 tbsp. oregano
1 tbsp. cumin seeds or powder
200ml coconut milk
1 ½ tbsp. tamari
½ medium leek (approx. 2 cups)
1 red pepper
1 red onion
125g pak choy
100g black bean noodles
handful fresh coriander
sesame seeds (optional)
