EASY VEGAN MEAL PREP IN UNDER 1 HOUR (Breakfast/Lunch/Dinner)


[ OPEN FOR RECIPES! ] Today I’m sharing with you 3 vegan meal prep ideas that take less then one hour to make and are all healthy and super easy to make for school or a work week!

RECIPES:
Tofu Scramble:
1 cup tofu (I used medium firm but if you want to use firm/extra firm
tofu just add a couple tbsp of water to make it more moist)
1 tbsp nutritional yeast
1/8 tsp of black pepper, turmeric, onion powder, paprika, dried basil, and kala namak salt
a little cayenne pepper for heat
3/4 tsp soy sauce

+ Serve with medium chunky salsa, cilantro, and 2 slices of buttered toast

Curry Chickpeas:
2/3 cup diced onion
2 cloves minced garlic
1 389ml can chickpeas drained and rinsed
1 cup tomato basil pasta sauce
1/2 tbsp Japanese curry powder
salt and black pepper to taste

+ White rice

Noodle Stir Fry:
6oz somen noodles (use your favourite kind of noodles like soba, udon, or even wheat pasta)
2 cups sliced mushrooms
1 carrot sliced
1 red pepper sliced
3 cups baby spinach
3 tbsp soy sauce
1 tbsp mirin
1 tsp sesame oil
1 tsp sriracha
1 tsp fresh ginger minced (if you don’t like a strong ginger flavour add 1/2 tsp instead)

+ White rice

  2. Omg looks delicious! I will need to try curry chick peas ! I’m not vegan or a vegetarian but I might start trying one time a week to see how it goes
