Easy VEGAN INDIAN RECIPES | Mint Chutney + Aloo Paratha

Vegan Mint Chutney Recipe

3 cups fresh mint leaves, stems removed
1 cup fresh cilantro, stems removed
1/4 cup chopped onion
1 plum tomato
1 small green chili (optional)
2 tbsp lemon juice
1 tsp salt

Combine ingredients in a food processor and pulse until the consistency looks like pesto. Serve a spoonful along side your favorite Indian dishes 🙂

NOTE: 1 whole green chili makes this VERY spicy! I liked it, especially since you usually only eat a little bit of chutney at a time, but still, it’s hot so if that’s not your thing, try using 1/4 of a chili..taste it then add more if you like. Remember it’s always easier to add spice to a dish if it needs it than it is to take it away after it’s already mixed it. Go slow 🙂

Vegan Aloo Paratha Recipe

1 cup atta flour, plus extra for dusting
1/2 cup water
1 large potato
1 tbsp finely chopped onion
1/4 tsp grated ginger
1/4 tsp chili powder
1/4 tsp coriander
1/4 tsp salt
1 tsp chopped cilantro
2 tsp olive oil (optional)

In a bowl, add flour and water and mix until a ball of dough forms. Gently knead dough for about 30 seconds-1 minute and set aside.

Remove the skin from one boiled (and cooled down!) potato and add to a bowl with onion, ginger, cilantro, and spices. Mash until well combined and taste to see if it needs more salt.

Next, dip a small ball of dough into a plate of flour and roll into a small disk. Add 1/4 tsp oil and 1 heaping tbsp of the potato mixture.

Wrap up edges and dip in more flour, then gently roll into a 3-4in disk.

Transfer to a warm pan and cook for 2-3 minutes until golden brown, then flip and cook for another minute or two. Add another 1/4 tsp of olive oil on top and flip again to crisp.

Serve warm with whatever veggies and rice you’re having for dinner or enjoy as a snack or savory breakfast treat 🙂
