EASY VEGAN DINNER | Asian inspired | Veggie Lo Mein, Rainbow Fried Rice


Hey guys! I wanted to share two easy dinner recipes, that take under 20 minutes to prepare. These easy dinners are perfect for busy nights, when you are running low on time. VEGGIE LO MEIN

Makes 4 servings (My measurements may be slightly off as I didn’t measure exactly, so feel free to adjust to your taste)

Ingredients

1 tsp sesame seed oil
1 tbsp chopped garlic
1 sliced onion (julienne)
1 sliced red bell pepper
1/2 c sliced mushrooms
1/3 c veggie broth
2 tbsp green onions
1/2 c snow peas
1/2 pack cooked linguine noodles (Cook according to package)
1/2 c soy sauce
2 tbsp maple syrup
1/2 c shredded carrots

1. Cook pasta according to directions on box. Drain and set to the side.
2. In a pre heated wok or large skillet add oil, garlic and onions. Saute until slightly brown. Add in bell pepper. Sauté for another minute. Add mushrooms and veggie broth. Let cook for 1 minute.
3. Add remaining ingredients and cook for 5 – 8 minutes until all veggies are tender. Enjoy!

RAINBOW FRIED RICE

Makes 4 servings (My measurements may be slightly off as I didn’t measure exactly, so feel free to adjust to your taste)

Ingredients

2 tbsp sesame seed oil
1 tbsp chopped garlic
1/2 c diced onions
1/2 c crumbled firm tofu
1 tsp turmeric
2 c cooked jasmine rice (Feel free to use rice of your choice) – cook according to package
Package of frozen mixed veggies
1/4 c soy sauce
1 c diced red cabbage (cut into bite sized pieces)
1/2 c green onions

1. Cook rice according to directions on box. Set to the side.
2. In a pre heated wok or large skillet add oil, garlic and onions. Saute until slightly brown. Push mixture to one side of the pan. Crumble in tofu and sprinkle with turmeric. Mix tofu with onion and garlic mixture.
3. Add in cooked rice and mix everything together well. Add frozen mixed veggies. Mix well. Add soy sauce and mix again. Add cabbage and green onions. Cook for 1 minute and remove from heat and serve! Enjoy!
3. Add remaining ingredients and cook for 5 – 8 minutes until all veggies are tender. Enjoy!
