RECIPES:

Coconut Curry:
(Makes approximately 4 servings)
1/2 yellow onion, chopped
1 red bell pepper, chopped
1 zucchini, chopped
2 cups chickpeas
1 1/2 cups coconut milk
2 tsp curry powder (more if needed)

Preheat a frying pan to medium heat. Add 1 tsp oil, the onions, bell pepper and zucchini. Cook until onions are translucent, about 5-6 minutes. Add chickpeas and cook another 3 minutes. Add curry powder and coconut milk. Stir to combine and simmer until sauce thickens, about 5-10 minutes. Serve with cooked brown rice. For 1-2 servings, cut the ingredient quantities in half.

Sweet & Spicy Tofu:
Chop a block (or however much you want to eat) of firm tofu into cubes. If you are making 4 servings, use an entire 12 oz. block of tofu. If just making one serving, use about 1/4 to 1/3 of a 12 oz. block. Preheat a frying pan to medium heat. Add 2 tsp oil to the pan and allow to heat for 30 seconds. Add the tofu cubes and cook until they start to get crispy. Pour on some maple sriracha sauce (recipe here: https://itslivb.com/2018/01/20/6-sauces/) and cook until the sauce thickens and tofu is coated. Add some chopped green onions if desired. Serve with cooked brown rice.

Burrito Bowl:
Cooked brown rice
Lettuce
Corn
Black Beans
Cherry Tomatoes
Avocado

  1. I love your energy! & I’m so happy to have stumbled upon your videos! Would love to support each other! Keep up the good work! It doesn’t go unnoticed 🙂

  2. Loved the video!! By the way, may I sub the coconut milk with something else? Hence, soy milk? We just don’t have coconut milk here so I don’t know what to do…

  3. Question, as someone who is transitioning to a vegan lifestyle, wouldn’t the tofu had tasted better if you let it marinade? I don’t have much experience cooking with tofu, so I am honestly curious.

  4. Off-topic, but you look amazing in this video! Your hair looks super shiny, and I love that flowy, silky top you’re wearing (really goes with your skin tone).

  5. All these rude comments under this video make me angry (even with all the positive ones). I personally think that these were great *ideas* (key word: this wasn’t a video for “super creative and exciting meals to bring to work!!”) for meals to bring to school/work, and they look absolutely delicious as well! Liv always puts her utmost efforts into her videos and I’m disappointed that some people don’t appreciate that. Nevertheless, I’m so proud of Liv that she launched her own online cooking course and I’m sure that it’ll do amazing. /btw you look absolutely ravishing in that red top in front of the blue background, bringing out your eyes 😻, and I hope that your grandmother is doing well ❤️/

  6. I love making burrito bowls because you can eat them cold and don’t have to worry about heating them up. You present yours so much more nicely than I do though – I just kind of bundle everything in together! x
