Easy Quick Pasta Moily Indian Fusion Cuisine
This is a unique recipe of spaghetti cooked in a traditional Indian curry from Kerala called Moily or Moilee. It’s a coconut milk based dish. Simple to make, yet bursting with fresh flavors!

Ingredients
2 Tbsp Olive/Coconut oil
1/2 tsp mustard seeds
10 fresh curry leaves (curry patta), plus more for garnish
1 tsp ground turmeric
Salt to taste

Main Ingredients
2 medium onions, sliced
4 green chilies, stemmed, deseeded and cut lengthwise
2 1/2 tablespoons lemon juice
2 cups coconut milk (200 ml)
1 medium tomato, small cubes
1/2 Packet spaghetti (250g)
Parmesan Cheese — 20 – 30 gms
Garlic (bashed) — 8 — 10 cloves
Ginger chopped — 5 gms (1-inch piece)

Cooking Method
Bring salted water to a boil. Add the spaghetti and cook until tender, 9 – 10 minutes. Drain and place in a large serving bowl.
Meanwhile, Heat the oil. Add ginger, garlic and onions, and cook until onions are soft and translucent and garlic is golden, stirring occasionally. Stir in the chilies, curry patta, mustard seeds and turmeric powder.
Now add thin coconut milk to this mixture. Add salt to taste. Reduce the heat to low, cover, and cook for about 6-7 minutes, stirring occasionally so it does not stick. Now add the tomatoes.
After a minute add cooked spaghetti to this reduced sauce. Cook for another 2 minutes or till the time the sauce coats the spaghetti. Finally drizzle lots of lemon juice, grate parmesan cheese and serve hot.

  1. Made this for dinner along with a side of bruschetta. I sprinkled some parsley and pepper on the moily in addition to the recipe. It turned out spicy and tangy- delicious! It tastes almost like vermicelli upma or savige uppitu.

  2. basically u need 100 gm khoya/mava, 75 gm Paneer, Rose syrup, sugar, mixed dry fruits, rose petals, Rice flour
    * make the dough of rice like we make for anarsa dish but add rose syrup to it so that it becomes pink in color* now khoya,paneer,dry fruits mixed, sugar, cinnamon powder, butter & chopped rose petals ka stuffing banakar stuff it into puri shaped dough…(round) …then fry it in ghee now its becomes like a kachorii & finally twist in the tail is kachori ko just break a little in between like pani puri mein karte hai & put Vanilla ice cream in it when it gets cooled garnish with rose petal i have named it Gulshan-e-Gulaab 😉

  3. Hie Saransh sir..this was an amazing recipe. Simple yet delicious. I am myself a foodie and have experimented and invented something intresting. As you know Eid is knocking at the door, I have a sweet dish for Eid. I’ve named it GULSHAN-E-GULAAB.
