Easy Italian Recipes – Risotto

Ingredients
1 cup Arborio rice
1 cube of organic vegetable stock
1 liter water
4 tablespoons extra virgin olive oil
2 stalks celery, finely chopped
2 garlic cloves, finely chopped
1 teaspoon dry thyme
1/4 cup freshly grated Parmigiano Reggiano
1 tablespoon lemon zest
1 small onion, finely chopped
2 tablespoons lemon juice
salt and pepper to taste

Instructions
1.Bring chicken stock to simmer in the water.

2.Take deep frying pan and heat olive oil on medium heat. Add vegetables and caramelize them for about 5 minutes. Add the rice and mix it well with oil and vegetables.

3.After oil soaked well, add about ½ cup of chicken stock. Mix it until it soaks in the rice completely.

4.Then add the next ½ cup of chicken stock and mix it until it soaks in the rice completely as well. Do the same until all the chicken stock is absorbed. It will take about 20 minutes.

5.Add lemon juice and Parmigiano for extra creaminess, mix well. By the time the dish is done the rice will gorgeously creamy.

  1. You know the quality of rice is different and the heat needs to be quite high. Bet for the most parts you did it right. Try with different batch of rice.

  2. dear Victoria, i was able to cook it by using ur direction, but it took me more than an hour. may be, to inform u how i cook it, first, i fry onions with olive oil then i add peeper finally tomato sauce with arborio rice then stir it by adding water till it comes to boil. this is what i used formula. may be was i wrong ?

  3. Hi Nice meting you Solomon from Ethiopia. Yes you can, make sauce out of it. Fry in olive oil onion, pepper and tomato together. Mix it with rice let the rice soak up the juices. Then continue the recipe as written. Add water or broth until done. Thank you for using my recipes.

  4. hi victoria, my name is solomon from ethiopia. i’ve bought arborio rice and have no idea how to cook it. because, we ethiopians recipe is different from in any other country. for example, when we prepare rice first of all, we boil water after that we add rice until it boils then we add tomato ketchup then we serve. or can i use by using onions, pepper, tomato and olive oil to make rissoto ? please just let me know as fast as u can !
