  1. Made the one with salsa and cumin today. Used Mango Peach Salsa from Costco It was awesome! I also had some caramelized onion and peppers I threw in with the roasted corn from Trader Joe’s. Thanks for the idea! Can totally see this in my rotation!

  2. I think I’ll be making at least one of these this week as a base for a vegan meal prep. I like to make one think in bulk each week so I can add stuff to each meal and these are great and simple options. The complete protein from the quinoa is also a big plus
