Crock-Pot Sweet Potato Carrot Soup | Vegetarian | 5 Ingredients | Slow Cooker Soup | August Cooking | Vegan
Crock-Pot Slow Cooker recipe:
2 large sweet potatoes, peeled and chopped
5 large carrots, peeled and chopped
1 tablespoon of fresh ginger peeled and grated
3 1/2 cups vegetable broth
a few green onions for garnish
1. Combine all ingredients in Crock-Pot slow cooker. Cover, cook on high for 4 hours or low for 8 hours.
2. Puree soup with hand bender or in batches in blender or food processor. Return to Crock-Pot slow cooker.
3. Spoon into serving bowls and garnish with green onion.
