crock pot minestrone vegetarian

Crock pot minestrone vegetarian soup is easy to make at home. My family loves this soup. It is a great tasting and filling soup that requires almost no effort to make at home. Here is the recipe for the crock pot minestrone vegetarian soup I made in this video.

Vegetarian Minestrone Soup Ingredients:
1 can (14.5 oz) of diced tomatoes
2 cups of chopped carrots
2 cups of chopped white potatoes
2 cups chopped celery
1 white diced small onion
5 cloves of minced garlic
1 Tbs of your favorite Italian seasoning
1 teaspoon salt (This is optional because the stock has plenty of salt)
1 teaspoon pepper
4 cups vegetable stock
2 cups water
3 cups Tomato Juice
1 can red kidney beans, drained and rinsed
1 can cannellii beans, drained and rinsed
2 cups zucchini, diced
1 cups Ditalini pasta (uncooked)
1 can (15 oz) green beans, drained

Step 1
Add in to the crock pot the tomatoes, carrots, potatoes, zucchini, celery, onion, garlic, salt, pepper, and Italian seasoning.

Step 2
Put in the tomato juice, vegetable stock, and water.

Step 3
Put the lid on the crock pot and set it on high for 4 hours.

Step 4
Add the remaining ingredients (green beans, white beans, kidney beans and pasta). Mix it up and let it continue to cook on high for about 30 minutes. Once your pasta is soft it is time to eat.
