Classic Italian Pasta -Spaghetti Aglio E Olio

The most classic pasta recipe ever… So delicious…


250 gms Spaghetti
6-8 cloves of garlic
1 teaspoon chlli flakes
2 stalks of fresh thyme
1/4 chopped basil
1/4 cup parsley
1/4 rockey leaves (optional)
Pinch of Salt
5-6 Tablespoon Olive oil
1/2 cup greated cheese (Parmesan preferably)

Cooking Instructions

Boil Spaghetti in salted boiling water.
Drain the Spaghetti and keep aside 1/2 cup pasta water aside.
In a pan put 6 tablespoons of olive oil.
Add wafer thin chopped garlic to the oil. Make sure the gas is on very low heat.
Brown the garlic very slowly with regular stirring.
Add thyme and chilli flakes to the garlic oil.
Once light brown add pasta water to stop the cooking process.
Stir in you Spaghetti and give it a good mix.
Once nicely mixed add chopped basil, parsley, rocket and chess.
Serve up in a bowl and greated some cheese on top.
Add a bit aged blasmaic vinegar for extra flavor
