Soft cinnamon raisin scones–they are great with coffee or tea!
2 1/2 cups gluten-free oat flour
1/3 cup raisins
1/3 cup brown sugar
1 Tbsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. salt
1/2 cup almond milk
1/3 cup olive oil
1/2 Tbsp. raw sugar (or regular sugar)
1/4 tsp. ground cinnamon
Preheat the oven to 400 degrees Fahrenheit. To a bowl, add oat flour, raisins, brown sugar, baking powder, cinnamon, and salt. Stir well. Add almond milk, and olive oil. Stir until dough comes together. Shape the dough into two disks, and place on a greased pan. Slice each disk into four wedges. Separate the wedges so they aren’t touching. Mix cinnamon with raw sugar, and sprinkle on top of the scones. Bake 20-24 minutes. Makes eight scones.
