cider-glazed Brussels sprouts (vegan & gluten-free) Something Vegan Thanksgiving sides week


RECIPE
1/4 cup apple cider
1/2 Tbsp. organic brown sugar
1 tsp. apple cider vinegar
1 Tbsp. olive oil
2 lbs. Brussels sprouts, outer leaves removed, and halved
Half of a medium onion, sliced
1/2 tsp. salt
1/4 tsp. ground black pepper

To a small bowl, add apple cider, brown sugar, and apple cider vinegar. Whisk well and set to the side. To a large pan over medium-high heat, add olive oil, Brussels sprouts, onion, salt, and black pepper. Stir and let cook until tender- about 7-9 minutes. Add the cider mixture. Stir and continue to cook until the glaze thickens and coats the sprouts. Makes 4-6 side servings.
